- Mutton (cleaned and cut)1000 g
- Ripe Tomatoes (quartered)500 g
- Ginger-Garlic Paste2 tbsp
- Green Chilies (slit)6 pcs
- Cooking Oil/Ghee0.5 cup
- Black Pepper (freshly crushed)1 tsp
- Salt1.5 tsp
- Fresh Coriander (chopped for garnish)0.3 bunch

Heat oil/ghee in a wok (karahi) and fry the ginger-garlic paste for 1 minute until aromatic.

Add the mutton pieces and sear on high heat for 5-7 minutes until they change color to light brown.

Add salt, cover the wok, and let the mutton slow-cook in its own juices on low heat for 20-25 minutes until tender.

Uncover, layer the quartered tomatoes and slit green chilies over the meat, cover again, and simmer for 8 minutes until tomato skins loosen.

Remove the tomato skins, mash the tomatoes into a rich gravy, and stir-fry on high heat to evaporate excess water.

Sprinkle freshly crushed black pepper and chopped ginger, stir for 2 minutes, garnish with fresh coriander, and serve hot with naan!
